  4. Prepare 2 of green chillies, deseeded and finely chopped.
  5. Prepare 3 of onions finely chopped.
  6. It's 2 tsp of ground ginger.
  7. You need 400 ml of cider vinegar.
  8. It's 1 tsp of salt.
  9. It's 1000 grams of apples, peeled, cored & chopped.
  10. Prepare 300 grams of seedless white grapes.
  11. You need 450 grams of granulated sugar.

  1. Toast the coriander & cumin seeds in a dry frying pan until fragrant then grind to a coarse powder.
  2. Toast the mustard seeds until they start to pop then add them to the powdered seeds.
  3. In a pan put the chillies, onions, ginger, vinegar and toasted spices. Bring to a boil then turn down to a simmer for 10 minutes until the onions are softened.
  4. Add the chopped apple, grapes, sugar and salt and bring back to the boil while stirring.
  5. Let it boil for 15 - 25 minutes until the mixture is thick, stirring now and again.
  6. Pour into warm sterilized jars, seal and label.
  7. Store in a cool dark place for up to a year.
  8. Makes around 3 x 454g jars, 1.4kg / 3lbs.
